www.pianofiles.com is definitely the best site out there.
just make an account, search for the piece you want, and send a message to the person that has it. normally you'll get the music within a few hours to 2 or 3 days. email lots of people that have the sheet - you've got a better chance of getting it quickly then.

i use this site ALL the time, i get pretty much every sheet i could ever want through it =)
Libraries often have better quality sheet music than the internet. Check them out, play through and find stuff you like, then photocopy it and build up a binder.
If you really want classical stuff from online, this is the best spot, but only some of the stuff is free.
